Are you guys like me, where you need something rich in protein and carbs to start the day off right? No bowl of cereal or smoothie will do the trick for me. I need substantial hot food that will kick start my metabolism and keep me full until lunch (at least first lunch!). I tend to gravitate towards those unhealthy, prepackaged frozen breakfast burritos because they are quick and fill me up in the morning. So my husband and I decided to make our own frozen breakfast burritos.
We now make these in batches about once a week and make enough to last the workweek, so about 10 burritos. Prep time is only about 30 minutes, so I like to do this on a Sunday evening when I am winding down for the day and preparing for the week ahead. Ingredients used:
- Whole wheat tortillas
- Ham or sausage
- Shredded cheddar cheese
- Diced potatoes (you can also use the frozen “Potatos O’Brien”)
I scramble the eggs first with ham or sausage. I cook the diced potatoes separately, and if I’m not using the frozen kind that already includes onions and bell peppers, I will throw those in with the potatoes. I layer the cheese with the eggs and potatotes mix onto a whole wheat tortilla, and wrap the burrito in foil and throw it in the freezer. Super easy and a bit healthier than the pre-packaged kind! Microwave for about 2 minutes when ready to eat 🙂
