Food Inspo: Homemade Breakfast Burritos

BreakfastAre you guys like me, where you need something rich in protein and carbs to start the day off right? No bowl of cereal or smoothie will do the trick for me. I need substantial hot food that will kick start my metabolism and keep me full until lunch (at least first lunch!). I tend to gravitate towards those unhealthy, prepackaged frozen breakfast burritos because they are quick and fill me up in the morning. So my husband and I decided to make our own frozen breakfast burritos.

We now make these in batches about once a week and make enough to last the workweek, so about 10 burritos. Prep time is only about 30 minutes, so I like to do this on a Sunday evening when I am winding down for the day and preparing for the week ahead. Ingredients used:

  • Whole wheat tortillas
  • Eggs
  • Ham or sausage
  • Shredded cheddar cheese
  • Diced potatoes (you can also use the frozen “Potatos O’Brien”)

I scramble the eggs first with ham or sausage. I cook the diced potatoes separately, and if I’m not using the frozen kind that already includes onions and bell peppers, I will throw those in with the potatoes. I layer the cheese with the eggs and potatotes mix onto a whole wheat tortilla, and wrap the burrito in foil and throw it in the freezer. Super easy and a bit healthier than the pre-packaged kind! Microwave for about 2 minutes when ready to eat 🙂

Things Every Working Girl Should Have in Her Desk

Teabags because nothing is more stress-relieving than a hot cup of tea. My favorite is an herbal Peach Mango blend from Safeway.

Hand Sanitzer you don’t want to catch that cold going around the office!

Feminine Products you might not always have a co-worker who can help you out!

Gum/Mints you don’t want coffee breath going into that meeting!

Cell Phone Charger who wants a dead phone! I always keep a charger cable at my computer.

Light Cardigan/Sweater the air conditioning is sometimes too cold for me, especially during these summer months when I wear sleeveless tops to work and the AC is on high!

Reusable Water Bottle we should stay hydrated (and save money on buying a new bottle every time!)

Eye Drops being in an air-conditioned building all day can make your eyes itchy and dry. This is especially painful if you wear contacts like I do!

Fitness Tips

Drink tons of water Drinking a moderate amount of water throughout the day will not only energize your muscle cells and replace fluids lost through sweating, but it will (or should) also replace higher calorie beverages that you may normally drink.

Set calendar appointments to workout I set recurring calendar appointments on my phone to workout for one hour five to six days a week. When I see these appointments on calendar at work with time already set aside, I am much more likely to actually make it to the gym that night.

Create a workout plan I used to get very intimidated when I would go to the gym. I had no idea where to go, what to do, and how to use 80% of the machines at the gym. Not to mention the free weights area looked like a testosterone-only zone. I began researching fitness websites and slowly learned different exercises. I have created a workout plan for each day of the week, including two cardio days, a shoulders and triceps day, a butt and abs day, a day of rest, etc. Workouts are much more effective when you focus on one or two muscle groups each time.

Invest in some cute, durable workout gear Because shopping is fun. And because when you bring home some cute (and durable) sports bras and workout leggings, I believe that you will be that much more motivated to hit the gym. My favorite gear is the VSX line from Victoria’s Secret (Tip: stock up during the semi-annual sales!)

Lift weights Strong is the new skinny. It is common for girls to think that lifting weights will make us “bulky” or “look like a man”. Wrong. I found that lifting weights “tightens” the body in ways that cardio usually does not. While cardio is fantastic for burning calories and keeping the heart healthy, weight training is what gives us that toned, defined look. Also – it is easy to become focused on that number on the scale. My advice to you is to instead focus on the number of sets and the number on those weights. We all know that a pound of muscle weighs more than a pound of fat, so as you become more and more fit, you will likely look skinnier than what the scale is telling you.

Invest the time Keep going, because once you start seeing results, you will become addicted.

Drugstore Haul

Why does it feel like all your favoritDrugstore Haule beauty products run out at the same time? I ran out of my go-to foundation so naturally, my eyeliner and makeup wipes had to run out as well. This coincidental turn of events obviously called for a trip to the drugstore.

I have been using higher-end foundations for a while so I thought this would be a good time to give my wallet a break as well as try new products at the drugstore. I had heard so many good things about the Covergirl 3-in-1 Foundation. You guys. I’ve only been using this for about a week now and I am in love. New favorite drugstore foundation for sure. Bonus: it has SPF 20 so it’s perfect for the summer!

Speaking of summer, my fourth of July was spent by the pool under the hot summer sun. My lack of appropriate SPF application resulted in a nice tan at first, but about a week later I started peeling, so I picked up the Hawaiian Tropic Silk Hydration After Sun Lotion. I’m hoping this moisturizing lotion with aloe will slow down the peeling and preserve my tan a bit longer!

As my blog name suggests, I have a mild obsession with mascara. I was attracted to the shiny pink packaging of the L’Oreal Voluminous Miss Manga mascara, so I had to pick it up. As I wandered down the aisle, I noticed that Rimmel was having a sale, so I grabbed a few products. I decided to try out the Rimmel Stay Matte powder and the Rimmel Match Perfect BB Cream.

I have a good feeling about these summer friendly products so stay tuned for a review if I fall in love with these products!

How I Manage My Time

I know this post isn’t really food or makeup related. But hey, I think this is one we can all relate to.

I just wanted to share a few of my tips and tricks for saving time and becoming a more efficient and relaxed person:

  1. To Do Lists: I use the Reminders app on my iPhone ALL THE TIME. I have a To Do list for all the random things I need to get done and a Shopping list for groceries, household items, etc. (which I update as soon as I remember that I need something). For more important items, you can set yourself a reminder too. This app helps me get all the things I need when I’m at the store so I don’t need to come back the next day.
  2. Calendar Appointments: I find that if I set aside time on my calendar to workout (I mean like a legit calendar appointment), I am much more likely to actually workout when I have an hour carved out my schedule already. This also applies to doing laundry, doing the dishes, and all those other delightful chores we like to put off or think we don’t have time for.
  3. Set outfits out the night before: This is my number one tip ladies. I could honestly spend a good 30 minutes each morning trying to put a decent outfit together and will inevitably be late to work and not even look cute after all the stress. So I always take a peek into my closet the night before and set aside what I want to wear the next day. I swear, this makes getting ready in the morning 10 times easier.
  4. Don’t let errands accumulate: If you’re anything like me, I get overwhelmed and honestly super annoyed when I realize I have 87 errands to do on my Saturday off. Instead, I try to do a few errands during the week, cutting down the amount I have to do on the weekend. I feel like I get so much more done this way and have more time on the weekend to just relax 🙂
